- After 1-2 minutes, when the base is set but the top is still moist, use the piping bag to make a line of cheese in the center of the omelet.
- Immediately after adding the cheese, use the spatula to lift the edges of the omelet off the pan and quickly roll it up before the cheese melts too much. Transfer to a plate seam-side down.
- Rub a little more butter on the outside of the omelet.

Ingredients:
- 200 g wheat flour
- 200 g sugar
- 75 g cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 240 ml milk
- 120 ml vegetable oil
- 2 teaspoons vanilla extract
- 240 ml boiling water
Preparation:
- Preheat the oven to 175°C. Grease and flour two 20cm cake tins.
- In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes.
- Add the boiling water and mix. The batter will be very liquid.
- Divide the batter between the two prepared tins.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in the tins for 10 minutes, then transfer to a wire rack to cool completely.

- 1.5 kg short beef ribs
