This recipe is perfect for anyone looking to whip up a healthy, vegetarian, and energy-boosting meal at home.

Ingredients:
For the Crispy Quinoa:
- 100 grams white quinoa
- 100 grams red quinoa
- 1 onion, finely chopped
- 10 grams mascarpone
- 20 grams Parmesan cheese, grated
- Salt and pepper to taste
For the Yogurt and Herb Sauce:
- 50 grams fat-free Greek yogurt
- 2 sprigs each of coriander, dill, tarragon, and parsley
- Salt and pepper to taste

Preparation:
- Preheat your oven to 180°C (350°F).
- Combine the white and red quinoa, then spread it evenly on a baking sheet
- Pour in enough water to cover the quinoa by about 3 centimeters.
- Add the finely chopped onion to the quinoa mixture.
- Bake for about 1 hour, or until all the water is absorbed.
- Heat a bit of olive oil in a pan to 140°C (about 285°F) and lightly fry one-third of the cooked quinoa until crispy.
- In a separate pan, mix the remaining quinoa with mascarpone, Parmesan, salt, and pepper.
- For the sauce, finely chop the herbs, discarding the stems. Stir them into the Greek yogurt and season to taste.
