Roasted Cauliflower

Ingredients:

  • A large cauliflower
  • Olive oil
  • Salt and black pepper
  • All the vegetables you want
  • Preheat the oven to 450º. Place the cauliflower on an oven-safe pan; add the vegetables around it and rub them all over with olive oil. Season with salt and pepper and bake until the ingredients are tender and crispy. Brush them again with olive oil halfway through reaching the final cooked point. (1.5 hrs aprox.)

    Ingredients:

  • Onion (diced)
  • Garlic (peeled and minced)
  • Vegetable broth
  • Dairy-Free Milk
  • Soy Sauce
  • Corn Starch

  • Heat a pan to medium heat. When hot, add the vegan butter and stir until it is completely melted. Then add the onion, cook it for 2 min. Add garlic and cook it for a minute; add the cornstarch and whisk the mixture thoroughly.

    Slowly add the vegetable broth to the mix to avoid lumps, then incorporate the soy sauce and finally pour milk into the mix, blending everything together really well until you get the desired consistency. At the end just season with salt and pepper.

    Veggie Stuffing

    Ingredients:

  • Cooking spray
  • A loaf of vegan bread
  • 3 tbsp. of olive oil
  • 1 diced onion
  • 4 sliced celery stalks

  • Slice the bread into cubes and leave them to dry overnight. 

    Preheat the oven to 350º. Heat oil in a large pan at medium heat and add the onion to cook lightly for about 5 min. Add garlic and celery, continue cooking and stir occasionally until the celery starts turning translucent; then pour the vegetable broth and season with salt and pepper.

    Mix bread with the mixture, transfer it to a greased pan, cover it with foil and bake for 50 min or until golden brown. 

    Mashed Potatoes

    Ingredients:

  • Gold potatoes cut in halves
  • Salt and pepper
  • ⅓ cup of olive oil
  • 3 finely minced garlic cloves
  • 6 tbsp. of vegan butter
  • Peel the potatoes and put them in a large pot. Cover with water, add some salt and cook them for around 15 min. Drain the water and mash the potatoes. 

    In a small pan, heat the oil and then add the garlic to cook for 1 min approximately. Pour oil and vegan butter to the potatoes and mix until creamy. Finally, season with salt and pepper.

    Vegan Pumpkin Pie

    Ingredients:

        For the crust:

  • Cooking spray
  • 1.5 cup of pecans
  • ⅔ cup of oats
  • 3 tbsp. of brown sugar
  • ¼ tbsp. of salt
  • 3 tbsp. of melted and cooled coconut oil.
  •     For the filling:

  • 1 can of pumpkin puree
  • 1 cup of dairy free milk
  • ¾ cup of brown sugar
  • 2 tbsp. of cornstarch
  • 1 tsp. of vanilla extract
  • 1 tsp. of cinnamon
  • 1/2 tsp. of salt
  • Preheat oven to 375º and grease a pie plate with cooking spray. 

    In a blender, add all the ingredients for the crust and pulse until you get a seamless dough. Press the mixture into the pie plate to create an even base, cover it with parchment paper, fill with pie weights and bake for 15 min. After that, remove the weights and paper and bake again for another 15 min. In a large bowl, mix together all the filling ingredients and pour over the crust. Bake for around 50 min and let cool completely before eating.
