Espresso brownies

If you are a coffee lover, then this recipe is for you. All you have o do is add some instant espresso to the batter to a delicious dessert.

Ingredients

  • 1 stick of unsalted butter
  • 4 ounces unsweetened chocolate
  • 1 ½ cups sugar
  • 1 tbsp instant espresso powder. You can replace it with a double shot espresso. 
  • 2 tsp vanilla extract
  • 4 eggs lightly beaten
  • 1 cup all-purpose flour
  • ¾ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp salt
  • ¾ semisweet or dark chocolate chips

    Directions 

    Preheat oven to 325 degrees and butter a 9-inch square pan. Do not forget to line the bottom with wax paper. 

    In a saucepan on very low heat melt chocolate and butter. Whisk sugar, espresso powder, vanilla, and eggs. Let it cool.

    In another bowl mix together flour, cinnamon, nutmeg, and salt. Add the chocolate mixture and combine. Add the chips. 

    Pour onto the pan and bake for about 30 mins.

    Ingredients

  • ½ cup canola oil
  • ¾ cups plus 2 tbsp garbanzo and fava bean flour
  • ¼ cup potato starch
  • 2 tbsp arrowroot
  • 2 tsp agave nectar
  • 2 ¼ tsp baking powder
  • ¼ tsp xanthan gum 
  • 1 tsp salt
  • ½ cup unsweetened cocoa powder
  • ½ cup unsweetened applesauce
  • 2 tbsp vanilla extract
  • ½ cup brewed coffee or hot water
  • 2 cups vegan chocolate chips
  • Directions 

    Preheat oven to 325 degrees and prepare a mini muffin pan with cups.

    Whisk together flour, potato starch, arrowroot, sugar, baking powder, xanthan gum, salt, and cocoa.

    In another bowl mix the oil, applesauce, and vanilla and slowly add the flour mixture until a homogenous batter formed. Add the chips. 

    Put 1 tablespoon in each muffin cup and bake for 15 minutes.

    Ingredients

  • 12 ounces dark chocolate chopped
  • 1 can evaporated milk 
  • 1 tsp vanilla extract
  • 3 cups grounded chocolate wafer cookies
  • 2 cups unsweetened coconut
  • 1 cup salted peanuts
  • ½ confectioners’ sugar
  • 1/2 pinch of salt
  • Directions

    Line a square baking dish with plastic leaving some on all sides.

    Melt chocolate with the evaporated milk until smooth. Add vanilla. 

    Combine cookies, coconut, peanuts, sugar, and salt. Pour in the chocolate mixture and stir.
