The world is changing. And so is its food. In the past few years, we’ve seen new food trends come and go as erratically as bumblebees fly. Some are short-lived, others are here to stay, and yet a few are posed to dominate in the near future. If you’re wondering which cuisines we’re expecting to see far more in the coming months, you’ve come to the right place. These are the 6 foods that will probably be trending in 2019.
With society becoming more and more aware about climate change and its relation with animal-based foods, vegan and vegetarian diets are becoming overwhelmingly popular. It’s a good bet to think this trend will continue in 2019, as we might even project an exponential increase in plant-based recipes specially designed to attract hardcore carnivores into the healthy green fold.
Following the same principle of moving away from meat, chefs are increasingly looking into the art of mushroom cooking, figuring out more shroom recipes than ever before. Shiitake, Enoki, Portobello, Maitake, and Eryngii are just some kinds of mushroom that are projected to become really popular in 2019, so be on the lookout for amazing new flavors as the world starts to consume more fungi.
It’s not all about the planet, however. The quest for health and quality of life in the past few years has reached near-obsessive levels, with people looking for better ways to take care of their bodies. And as carbs, calories, and sugar have become enemies of healthy eating, all food products are trying to cut them out as much as possible. We all love snacks and all kinds of junk food, but we’re well aware of just how harmful they can be. 2019 will see far more healthy substitutes for unhealthy ingredients in our treats with original ideas such as cauliflower pizza crust, chickpeas crisps, or zucchini-spaghetti. The idea is that, eventually, these substitutes will taste as good as the originals, but with the added health advantage. Sounds too good to be true, but hey: everything’s possible!
But substitutes will not be only about the snacks. For years, every corner in the food industry has been trying to produce satisfying alternatives for meat while reproducing its flavor, in order to appeal to all the carnivores who are simply unwilling to compromise taste for their health or the environment. It’s been common to mock faux-meat products—like the infamous soy meat—for its overall fake taste and the fact that it simply isn’t meat, but food engineers have been getting better at actually getting the flavor right. This year, the market of healthy substitutes will likely increase more than ever before—and it promises to offer the most palatable alternatives we’ve yet seen.
Yet another ever-popular—though highly unhealthy and environmentally unfriendly—food type is dairy products. Milk in particular. It’s difficult for humans to digest, and it requires the extremely polluting cattle industry. So, once more, with everyone being so environmentally aware, all foods that allow us to move away from dairy will thrive in 2019.
The most popular alternatives are nut-based milks, such as almond milk, or other famous soy-based and cashew products, so expect to see far more of that. However, a new trend is arising in the alternative-milk industry, with hemp, oat, and flax emerging as the next big thing.
Yeah, the environment and health are a big thing coming into 2019, but diversity is too. As the world continues its globalizing path, getting smaller with new and better ways to share and communicate, more and more people are looking to explore cuisines from different countries. Indian, Mexican, Japanese, and Italian foods were already popular, but now expect Ethiopian, Israeli, Moroccan, and Thai cooking to make a big splash in the market.
